Dominio de Tharsys Brut Nature is a bone-dry cava (just (0.8g/l residual sugar) from Pago de Tharsys, located 70 miles from Valencia. It is a blend of Macabeo, Parralleda and Xarel-lo, made using the Methode Champenoise before being aged in bottle for 16 months prior to release. This is a light and fresh wine with notes of citrus, apple, pear and apricot that makes a great-value aperitif and a perfect accompaniment to tapas.

Pago de Tharsys is a 12-hectare estate based at Requena, some 70 miles inland from Valencia on Spain's eastern coast. The vineyards are located on the plateau above Requena, 650 metres above sea level and face south and are planted in poor sandy soil with excellent drainage. The continental climate means that summers are hot and dry and winters are cold with occasional rains. Perfect for the cultivation of the various grape varietals grown at the estate which include Macabeo, Chardonnay, Parralleda, Albarino and Xarel-lo.

A pale straw yellow in the glass with greenish tinges. The persistent mouse carries with it notes of apricot, apple and pear. On the palate, light and fresh with a cleansing acidity leading to a lingering finish. A wonderful food wine with a creamy butternut squash soup, shrimp fra diavolo (linguine, dried chilli flakes tomatoes and capers) or a chunk of creamy Brie cheese.

    Lovely and dry and very drinkable Excellent service delivery hard as we stayed up a steep hill
    But the staff took it in thier stride and were very helpful on the telephone

    Placed the order and thought that the wine might be delivered in five or six days. The next day, I wrote to ask when I might expect the wine as I wanted to be sure to be in when it arrived. On sending the email, the doorbell went and the wine was delivered.
