Sauternes

Only given to sweet whites, made from Semillon and Sauvignon Blanc. Autumn mists encourage botrytis to develop on fully ripened grapes, which has the effect of shrivelling them and concentrating the flavours. Successive passes through the vineyards mean that only the grapes with most developed flavours are selected and yields are very low. Lusciously sweet yet balanced by crisp acidity, these wines have notes of honey, apricot and vanilla.
