The ultimate chocolate truffle....

Our favourite after-diner drink, Saliza Amaretto, has now been used to create indulgent chocolate truffles by artisan chocolatier Nicky Grant, and entered for a Taste of the West Award. 

Whilst many Amaretto's are made from almond essence and taste confected, Bepi Tosolini maintains traditional methods, starting with the crushing and maceration of real almonds. The sweet flavour of these almonds is infused into brandy, via a painstaking process of soaking, draining, steaming and blending.

This traditional approach results in a wonderfully unmediated flavour and a really delicious liqueur to savour. Tom & Nicky Grant discovered Saliza Amaretto working alongside us at events, and immediately saw the potential for creating a very special truffle. A small amount of Amaretto is skillfully balanced with other delicious ingredients in their latest creation of handmade marzipan flavoured with orange blossom, layered with dark chocolate ganache, which is blended with the amaretto and dipped in milk chocolate.

Based in Cornwall, Nicky Grant is recognised as one of the country's finest chocolatiers, producing wedding cakes, favours, chocolate sculptures and truffles. She combines her design skills in sugar and chocolate craft with outstanding local ingredients, such as Cornish cream, butter and eggs, wildflower honey, fruit and Cornish Seasalt (used in her award winning Caramel). Her fresh chocolate range is made without preservatives and additives, emphasising subtle flavour blends, textures and mouth feel.
