Champagne
Lying north of Paris, the Champagne region is at the northern extreme of winemaking. The result is high acidity, which is ideal as a base for the finest sparkling wines in the world. Chardonnay, Pinot Noir and Pinot Meunier are grown on the chalky soils and are picked by hand. Secondary fermentation and ageing takes place in cellars dug from the chalk, which stretch for kilometres under Reims and Epernay.
