Made from 50 different apple varieties: 40% selected for their bitterness, 40% for sweetness and 20% added for their high acidity, harvested from 150 to 300 year old trees. This is a medium-dry cider with delicious flavours of caramel, baked apples and crunchy apple-skin. The result is a drink of great quality, almost vinous and mouth-filling, with sufficient length and aroma to match with creamy dishes or spice-inflected ones as well as cheeses or vanilla-based desserts.
